It's tendon, from a cow..

It's pulled and pressed, then pressed with a small bit of wax. It's extremely strong and the color compliments leather really well. Their theory is that there is no reason to waste any part of the animal, especially if something can be used to improve the quality or appearance of the product by using a natural product than a synthetic product.

And yes Jan, cow tendon is also found in Pho. Yum.
