The tomato was soaked in calcium water which made it so sweet it tasted like raisins

Its actually made from watermelon, dehydrated then grilled

Wild Turbot, under a salted seasoning of borage stalks and reduction of the bones.

A Piece of milk fed veal, roasted and perfumed with vine cutting embers, and fragments of thyme, cinders, salt and crisp radishes.

Red Fruits with an uncooked orange leaf soup.

Several spoonfuls of clashing contrasts: Celery Ice Cream with Candied Celery Root and Edible Flowers.

WARM ARTISAN TABLET with whipped honey and oats

Vanilla foam with a warm "tablet" made with honey and oats, used to mimick a bar of soap and soap bubbles.

Not really. When it came it looked like a marshmellow, during the pouring of water, everyone looked really confused, but when you actually touched it, it was a "ohhhhh... duh" moment

Hahaha, at the very end of the dinner the waitress brought me this tiny white candle. The entire thing is made out of white chocolate, including the wick! It also had some sort of lemony filling.

Earlier this week.. Lunch at Sango.

I always found this place odd, just the combination of Japanese and Burgers wouldn't normally make sense, but then again, most things delicious don't, so what the hell.

First, Chili Burger. Gracious amounts of chili over molten cheese.

Second was a BLT.

And with that came knobby thumb sized cut chips.

To knock it all down, uber thick milkshakes. Texture felt closer to sipping melted Ice Cream through a straw, damn good.

Seared Tuna, smoked eel, pork crackling, cucumber, baby radish, pickled eggplant

Goat's cheese w beetroot, golden beetroot reduction, basil gelee, pine nut vinaigrette (This was gud)

Cured wagyu w white asparagus, artichoke, PX reduction, summer truffle & fried quail's egg

Rabbit terrine w foie gras, textures of carrot, hazelnut, sultana puree (superb)

Barra w parsnip puree, chorizo, chickpeas, bouillabaise sauce

Lamb cutlet w braised and crumbed lamb neck (no vis), tomato salsa, ratatouille, eggplant puree, potato cube & olive powder

the best dish of the night, showstoppingly good. perfect pink cutlet, supa smoove puree, tender lamb neck and the most amazing veg stew I've ever had.

after which was a cheese course and desserts which were pretty blah. here's a shot of the final strawberry cheesecake
