Yea, I just leave my Sharbo between.

Any of you knife dudes got insight on a good chefs knife? Sick of these fugazi knives I've been using; like trying to cut a pork loin with a brick. Been looking at some Santoku's and not sure where to throw my money.

Ordering one of those higonokami from Kiosk, good looks ML.

Not sure this is EDC material, but... bought a Shun for my mum and it's way, way sharper than any of her german steel. It's actually sharp enough that you don't need to pierce a tomato's skin first to get a good cut. Supposedly this is due to the sharpening angle on japanese knives.

I'm not super knowledgeable when it comes to kitchen cutlery, but Shuns seems to be good medium quality knives and are reasonably priced. They're also nice to look at.

From what I've heard though, you should avoid Santokus and go for a traditional ~8inch chef knife.

I'll leave it at that as I don't want to derail the thread too much. You can always PM me if you have questions.

I will do a full jap knife blowout either today or tomorrow.

I'm a cook full time, so my EDC is really a bag full of jap knives and kitchen stuff.

first bag dump; school day:

TV2cJ.jpg

most of this stuff is EDC, sans the book for school, pencil and two spirals.

i have a car so it acts as a bigger bag of sorts. notable things always in said car: clean socks, a buddha of some sort ( little red guys), surgical gloves, dental floss, gas can, jumper cables, torque wrench to be used as a club.

sorry for the non-steez iphone pics.

here's my knife bag.

left to right:

10.5" Togiharu G-1 Molybdenum Sujihiki / Left-Handed (my baby)

9.5" Misono Chrome-Molybdenum Chef's Knife (all around)

6" Fujiwara Kaku Nakiri (Veg Knife) (gets the most use)

5" Mac 'Professional Line' Pairing Knife (essential, unfortunately it's tipped)

8" Joyce Chen Chinese Cleaver (workhorse)

10" Sabatier (old school, i don't use it. i need to get it properly cleaned)

so this would be my real daily edc

Question...

Been meaning to do this for a while, but havent made the time to do so, till now...

Where do you guys get the rivets, for this?

http://picasaweb.google.com/heath.dieckert/EDC/photo#5204867842193804498

Obviously Im not an arts and craftsy person, so I am clueless as to where I can get rivets.

Im sick of carrying a janitors load of keys. And or forgetting one set of keys.

while it is part of some people's EDC to bring a set of kitchen knives or marijuana

these items do not typically reflect the utility associated with general edc

so please take those convos to more specialized threaks :)

Ti mini123! How do you like it??

I feel bad seeing so many of those because 4sevens is about to release a minicr2 In ti with the same specs but in an even SMALLER package :/

yeah, I owe you rep because of your review of the Ti version where you didn't put it in as favorable a light as the aluminum version, I got the aluminum instead. So, thanks for saving me the $$.

However, that mini CR2 does look pretty sick. If it had a clicky I think it would be on my "must get", but we'll see.

^ agree, but I wouldn't lug a tactical 123 for keychain duty.

I hope 4sevens makes a MiNi 2xCR2 that supports up to 9V.. it would have like 300 lumens OTF or something ridiculous like that while being the size of a thicker AA lollll
