i see you are teh azn.

I'm Korean and live in Korea and wouldn't eat kimchi on a pizza. I hate kimchi to begin with though, so... They serve pizza with pickles here, even delivery orders come with a little tub of pickles (to replace kimchi as a pickled side dish).

I have succumbed mostly to the strange local pizza toppings though, some sound putrid at first... the two most popular topping combos here are potato wedges/bacon/corn/onion, and mashed sweet potatoes piped around the outside with any strange combo of toppings on the inside there. Tabasco all over it replaces our need for Sriracha.

My food pairings:

avocado X most anything (particularly grapefruit)

chicken breast X japanese yuzukoshou sauce

parma ham X all

katsu X curry

japanese demiglace sauce X anything (straight rice, if need be)

cilantro X all

dammit. your other choices are good too but you sure do know some good obscure japanese secrets. i'm especially impressed with yuzukoshou. good with lot of other yakitoris too.

Yeah, I have a minor obsession with yuzukoshou. That intial bite that is almost perfume-y and ends in a spicy note is incredible. I normally get it on all my yakitori, but this week my girl is going back to Osaka for the weekend so I think I am going to be a very happy man with like 4 or 5 bottles of it by next week, and plan to OD on it at home too, and experiment a bit as well.

Was it here on supertalk where we had the Youshoku discussion awhile back? Seems to me we did... I love how stupidly obvious yet ingenious this stuff gets, omurice, demiglace, hayashi rice made from a good demiglace base, voila, omu-hayashi. Curry, katsu, curry katsu. Demiglace and bechamel are like gateway drugs into the youshoku addiction.
