sorry ya'll, ended up watching Confessions of a Dangerous Mind (for the 50h time) and just got to uploading them - would make a good .gif

start w/ pan-searing the chopped up chicken breasts, salt + pepper with garlic powder for initial seasoning:

2nd - chop up artichokes, roasted red peppers, black olives, frozen peas:

3rd - combine - pour in artichoke juice, roasted red pepper juice, a splash of olive juice, and a bit more seasoning:

pasta cooked as well, combine pasta with ingredients in pan, et voila:

crack chicken. I'll explain the name another time. staple of the jeepster home-cookin repertoire.

just made some delicious chicken tacos..

i grilled the chicken, and the beef thats in the middle is slow cooking right now in the crock pot ..

salsa .. serranos, tomatos, onions, habeneros, everything was roasted prior to being chopped to give it that nice mushy consistency with that robust roasted taste

heres the beef tacos i was talking about .. i was too high and hungry to take a lot of pictures..

cooked like last time, for six hours with chipotle peppers and a lot of other goodness

OK.

Red braised mushrooms.

Simmering the braising liquor. Cinnamon, Anise, Chilli, Garlic, Ginger, Coriander root and leaves, Orange peel, Soy sauce, rock sugar, Shaoxing and water.

Then for the mushrooms - garlic, shallots, ginger and Chilli.

After a couple minutes add the mushrooms - I used a mixture of brown caps, portabella, shiitake, oyster and porcini.

Then I covered the mushrooms with the braising Liquor and simmered it all off til I was happy with the consistency.

And I served it up over plain white jasmine rice.
