8 course Degu + matching wines and oysters at Sydney's premier seafood restaurant. Although the term makes it sound silly.

It juts out onto Rose Bay, like you're dining on the water. Even if my shit photoskillz doesn't really show it.

A variation on Thomas Keller's amuse bouche with wonton skin instead of a tuile.

John Dory Carpaccio. Deceptively simple. I wrapped up each slice and swiped the dressing. Salty, sour, herbaceous and fishy.

Tian of Spanner Crab with Scallop Ceviche, Pea Salad, Pea Jus

Pan Roasted Scallops with Sauteed Veal Sweetbread, Mushroom, Cauliflower Tofu. It's actually cauliflower puree in the texture of tofu.

Crispy Skinned Murray Cod with Serrano Ham, Caramelised Witlof, Dutch Carrots, Bitter Orange. So much going on yet feels so coherent.

Roquefort Cheesecake with Pear Gel, Celery, Maple Syrup, Fig and Grissini Sticks. The celery/maple/fig are the droplets. The pear gel sits over the cheese, which somehow doesn't have a streak of blue at all.
