recent trip to Hong Kong.

Went to Motorino for dinner. I am partial to the majority that think the crust is just burnt.

Had dimsum at Lei Garden in Times Square. The texture of this pork, it's something you need to try at least once.

Met up with a friend who also came over the city, subsequently ate at Butao again. Oh yes.

Last meal of the trip was lunch at Mochi Cafe (around 100m from Butao) Handmade udon, literal melt in your mouth pork.

i had this last night

Shellfish broth, side stripe prawn, lemongrass

Asparagus, morel, citrus, hazelnut

Albacore, fennel, radish, Meyer lemon

Wild salmon, kohlrabi, horseradish, dill

Ling cod and seaweed butter

Duck egg, artichoke, maitake, rye berries

Sturgeon, mussels, cabbage, picked walnut

Onglet, ramps, fermented garlic, marrow vinaigrette

Brie de Meaux, rhubarb, Quebec honey

Carrot cake, clementine, sultana

Dark chocolate, birch syrup, hazelnut

it was very good. i didn't take pictures but this menu doesn't necessarily do the plating justice. it was exceptionally good looking food

Il Forno probably serves some of the best Italian food this side of the hemisphere. Northern Italian owners live in the house upstairs.

 

That day's special, two rings of roasted pork belly on roast pumpkin.

The pizza was also a big revelation. It was that bread/crust and spicy olive oil they encourage people to douse it in.

57 cents for 2 pacific saury / sanma (frozen) B) how i chose to do it:

 

1. remove scales, guts, wash cavity, pat fish dry

2. line foil/tray with coconut oil

3. rub lemon/pepper seasoning in cavity

4. sprinkle sea salt, cayenne/black pepper on both sides

5. turn on broil (low), wait a few minutes

6. broil first side 3-4 minutes

7. take out, flip, broil 1-2 minutes more

8. remove. lightly add condiments; lime, sesame oil, sweet soy

wish i had a wire rack to directly cook on. it doesn't really need the sesame oil or the sweet soy as it is nice and meaty. yours will also look better (straight) if you don't cut it open to remove its guts. but then that area will be bitter and shit

thinfinn what is the yogurt looking dessert in your posts? btw all the food looks bomb considering the restrictions

it´s what we call "Magerquark" in germany...should translate to "low fat curd" or "low fat yogurt"!

living completely dairy free now though, so no more of that awesome stuff for me atm. ...damn! :)
