about to make a Chicken Luau. barbecue sauce (i hate the bbq pizzas), cheese, bacon, chicken, and pineapple.

first we take out the dough skin. this is a medium. two people come every morning at like 7:30 to do all the dough for the day. on weekends they come in at 5 because we need a lot of it

heres the dough, already brushed all the flour off

4323806306_a60b8a6e4e_o.jpg

next i dock it out with this roller thing. this stretches the dough out, keeps the dough from just puffing into a balloon in the oven, and my boss says it helps the crust crisp up more or some shit

4323806340_3dba57f6b3_o.jpg

stretch the skin out a little more onto the screen

4323806376_d72f0e8ca7_o.jpg

and throw some BBQ on that bitch. we use KC Masterpiece for whatever reason

4323806406_6cea5c0ab1_o.jpg

sauce spread, throw cheese on

4323806428_01f7dd344d_o.jpg

first goes the bacon

4323071687_2628503efb_o.jpg

then the chicken

4323806488_318d6f97af_o.jpg

then the pineapple.

4323806526_2379172660_o.jpg

pop that sucka in the oven and about 7 minutes later its hot and ready

4323071771_a416fac725_o.jpg

folded some boxes and went home for the night.

I don't think that's his partner, since he said "used to fool around with". So picture taking is cool? On the other hand, you can barely see anything in that picture. I definitely get what you're saying though, pulling an Edison isn't cool, lul.

Apologies for these lame pictures, but this was too epic to not document it if I could help it.

My jeans (MFSC CPO, vintage chambray, PBJ) brewed my first commercial batch of beer today, Mad River's Steelhead Double IPA. This tiny brew system is the very first setup Ken Grossman created from dairy equipment to start up Sierra Nevada. Very low tech and hands on.

Adding water and grain to the mash tun

Sparging (running water through the cooked grain to extract the fermentables)

One story up, adding malted wheat to the augur for the next brew

21039_522731729570_30901258_30990715_7227197_n.jpg

And some dark crystal malted barley

Time to switch out of the desert boots into steel toed waterproof boots

21039_522731749530_30901258_30990719_2976431_n.jpg

CPO comes off when I have to shovel hundreds of pounds of steaming spent grain out of the mash tun

21039_522731759510_30901258_30990721_4911489_n.jpg

Clean as a whistle (mostly)

Beer boiling away with the 3rd hop addition waiting to go in21039_522731774480_30901258_30990724_4378789_n.jpg

In they go

21039_522731779470_30901258_30990725_4081838_n.jpg

After the beer is pumped out into the whirlpool (helps clarify) I gotta get in there and muck out over ten pounds of squishy hops. It's like being in a delightfully hoppy sauna

At this point there are no less than five dudes watching me and laughing their asses off (this is the bane of Mad River brewer's existence)

21039_522731819390_30901258_30990732_1822671_n.jpg

The mucking bucket slipped out of my hands into the spent grain bin, much to everyone's amusement

21039_522731824380_30901258_30990733_6475911_n.jpg

There we go

21039_522731829370_30901258_30990734_6294369_n.jpg

After this it was just a matter of pumping the beer into the fermenter and sanitizing the whirlpool (novis).

To celebrate with the crew, a Lost Abbey 2009 Bourbon Barrel Angel's Share shared in the brewery laboratory :)

We ran errands today. I forgot to take pictures of everything.

We grocery shopped, I mailed out a pair of jeans to a friend in New Zealand, I went to the bank...

We took the dog on a walk around sunset.

We came home and realized that it was now about 15 degrees colder than when we left.

I decided to make a fire

Sarah is happy to be warming herself in front of the woodstove.

Soon we will cook dinner.
