what are you eating today?

chicken tortilla soup that i improvised... turned out pretty decent.

1 thing of chicken stock (the packaging is kind of like a big juice box)

1 boneless/skinless chicken breast

2 limes

1 can of corn niblets

1 tomato

1 jalepeño

1/2 sweet onion

Oil (olive or peanut)

Tobasco

Spices: salt, cumin, powdered garlic

Garnish: guacamole, fried corn tortilla strips, cilantro

Simmer chicken stock. Dice 1/2 onion and tomato, drain corn. Add to broth. Cut jalepeño lengthwise, remove seeds. Dice 1/2 and add with uncut half. Shake in tobasco to taste (I did 10 shakes. It wasn't too spicy) Let this simmer while you cook the chicken. Before adding chicken, remove whole half of jalepeño.

Cook and shred chicken breast. Season with garlic and cumin, cook a bit more (i wanted it to have a grilled taste) then add into soup. Let this simmer for a few, then juice both limes and add juice to soup.

Fry corn tortilla strips in oil of your choice. Drain on paper towel.

Put some in a bowl with a few corn tortilla strips, a bit of guacamole and cilantro.

Scarf. Serves like 3-4.

tea at HOUSE for defiance's birthday
