Burgers are easy, mate.

Buy meat with good fat content, at least 80/20.

Form patties.

Season both sides with salt and pepper.

Grill patties on a hot grill/pan/etc on one side till you see the first signs of blood breaking the surface.

Flip and grill other side for another 3-5 minutes, depending on how you like yours cooked.

I usually don't fuck wit any special seasonings on mine. Just pile on good toppings.

Like butta... I could've eaten it without teeth. SO GLAD I didn't fuck it up. Came out pretty damn near perfect.

haha, was going to post the same thing. fun article.

I think I would trade slightly more even cooking for a harder sear any day, though. Love that crunch.

Went to 21212 this afternoon in Edinburgh for lunch. Definitely one of the best meals I've had in a while. I wish I could remember all the dishes. I wasn't trying too hard since I figured I could look it up online later but I guess the menu they have up is different. :( Anyway, I sat down and they brought me some homemade chips with olives:

Strawberry and white chocolate w/ shortbread. In the background is what the sunflower milk came in. The milk poured out his mouth ^_^
