I also had a rib eye at Morton's a couple of years ago. While the meat was good and nicely charred, I was a bit annoyed by the herbs (or herbed salt?) they use, to be honest. It just overpowers the flavors you're looking for in a steak.

A butcher called "Finer Meats" on Chicago Ave sold me what they call a Delmonico.  It appears to be a ribeye suffering from gigantism, where the different parts flare out into enormous proportions.  It's good shit.  Cheap too.  I imagine the proportions are too large to be saleable...the thing was like 16" in diameter.  I'll try to sufinstagram the meats sometime this week if it's a staple item for them.
