i've become somewhat obsessed lately with mixing real cocktails. it started with some playing around on the Cocktail DB (http://cocktaildb.com/) and Drinkboy (http://www.drinkboy.com/). then i got Doctor Cocktail's book, Vintage Spirits & Forgotten Cocktails by Ted Haigh. so now i really want to find some bars in tokyo that make real cocktails.

what do i mean by real? i mean with actual lemon or lime juice from a fruit not a bottle, that kind of thing. where they make a manhattan with rye, not bourbon. or a bartender who knows which cocktails should be shaken and which ones should be stirred.

i've read that the park hyatt new york bar is one such place, but i'm not sure if i can afford it very often, nor that i wanna hang out with rich businessmen or whoever is probably staying there.

any tokyo folks out there know of a bar where the main draw is actually the drinks? all advice sincerely appreciated!

If you're interested in this stuff, EBay "The Gentleman's Companion" and "The South American Gentleman's Companion". Each title is a set of two books, one about food, one about drinks, from the 30s/40s. Extremely interesting stuff, real classics. They haven't been republished in 50 years, but they seem to show up on EBay every so often. You will be happy you bought them.
