I'd go with an ERJ145, for its good looks and smooth flights. There's a rumour one of them disappeared from Swissair's fleet when they rebranded.

Remove seating, install a series of rooms, with inspiration from Kubrik's 2001, MMM headquarters and a Scandinavian summer house. White panelling, minibars in every room, a real bedroom with a double bed, a nice little office/library, a bathroom with a Victorian bath (enamelled lion feet etc.) in the middle of the room.
