My favorite soup when I was a kid was oxtail soup (牛尾湯). It's incredible. It's a bit expensive to make nowadays though just for soup.. In LA, a small pack of 6 cuts of the tail is like $18. It was like $5 bucks when I was little. INFLATIONNNNNNNNNNN

It's not spicy. The red color comes from tomatoes soaked in grease from the marrow of the tails.

It takes just as long to simmer for a proper version too.

It looks like a healthier version of Pho broth -- haha which in essence it basically is minus MSG/seasonings + star anise.
