I recently started working in the kitchen of a restaurant and today my chef said my knife was sharp as shit. It was at the end of a shift with lots of prep and I didn't refine the edge as much as I usually do when I sharpened last. Made me smile.

Quit my job a few weeks ago to pursue cooking as a career (also, my job sucked). Think I have my first gig lined up as of today.

Been cooking a lot since I've been unemployed. Also been playing with lean dough breads. Just straight 100-60-3-2 bread, more or less. This loaf would have been really nice looking, but I made the scores a little too close together. Crumb was still pretty nice, though.

Glad I got to try this. First sour (and one of the first few beers bottled period) by 512. It was ok. Not very complex and a little too much balsamic vinegar taste for me. Kind of reminded me of an inferior, vastly less sour La Folie - although the fruit flavors were actually pretty different, if I recall correctly...way more apple in the La Folie.

Dark mild brewed with oak chips. Nice malty sweetness and body (especially for such a low abv beer). Vanilla and dark fruit from the wood. Kind of plummy as it warmed up. As you can see, it had a LOT of carbonation, which was sort of unexpected.

back to practice, bitches

first time out of a bottle. Raspberry front and center (2011 bottle). Nice funk in the nose, and great balance overall. Not quite as tart as when I had it before. Might keep my other bottle around for a while to see if it dries out some.

drinking BT11 now. way too sweet right now imo, looking forward to aging it. hopefully it settles down a bit.

To me, it was more hot than sweet...though it was still quite sweet...just really hot (made my tongue feel tingly).

That being said, I still enjoyed it. Would definitely enjoy it more in a year, I imagine.

If all the junk food on this thread was as good looking as what Vampy posts, fine, but apart from Rirawin, Dismal and a couple of other contributers this deserves to be moved from culture into trash. Would feel less compromised posting this if I didn't spend so much in restaurants I could afford a camera better than my blackberry to post with, but still, should be titled what are you eating today not what are you merely ingesting. Step up.

last few pages also should have mentioned fine posts from ironman, wild bill and catchforusthefoxes. Such a delicate but enormous line between good looking stuff that enhances your understanding of what other guys are monstering round the globe, and what some of you drab motherfuckers are rustling up with the menial aid one saucepan and a kettle whilst high.
