bought a duck to grill. didn't take prep photos cuz i didn't think it'd turn out well lol $2 CAD / lb

 

use tweezers to pull out all feathers you see

cleaver'd in to sections (back 2 pieces, breast 4, 2 wings, 2 legs)

use a very sharp knife to poke a whole bunch of holes in to the skin to let fat drain while it cooks

rub all over with five spice powder

 

make a marinade of plum sauce + soy sauce

 

i use lump charcoal not briquettes. light with newspaper has no smell or taste on food vs liquid firestarter. makes a shit ton of smoke as it's lighting though lol 

 

after charcoals lit, put on one side. leave drip pan on opposite side for ease of clean up / can collect duck fat for use later on something else

 

place all the duck pieces on one side of the grill, bone side down skin face up (never flip it over). arrange so that breast furthest away from coals 

 

don't marinate it right away, let fat drain out and skin crisp first. about half way start marinating, re-coating when you feel like it. make sure to check if there is enough coals

 

total cook time was 1 hour. not soo bad, but i probably grilled it for like 10-15 minutes too long in my opinion

that is just the breast pieces and the 2 legs. the meat from the back pieces and wings were ugly lol and used for duck noodles

@rirawin do you have anything in particular for Osaka/Kobe/Kyoto? 

Did a bit of initial research for a trip in late NOV here (https://goo.gl/d3Dx62), but then again, FOMO.

 

Managed to emotionally blackmail Noma for some seats last year during our honey moon.

@rirawin I am way too much of a Rene-fanboy to say anything w/o bias.

One thing that my wife pointed out which surprised us both was how most dishes cut this very Asian profile.

How we (Southeast Asians/Thai/Fil/etc) tend to balance with sourness, and contrast with texture.

Think this holds true for a lot of the other Noma-alumni (i.e. Relæ, Mume)
