spent sunday morning making bagels

dough, stiff as fuck

after about an hour resting

rolled into rings, then left to puff up for another 20 min

poaching in water with some sugar, which is meant to help them gloss up during baking

baked in oven for 12 min at 250 celcius. were actually way more shiny irl

Partly cuz I gained a ton of weight over summer, but mainly to support my mom who, tho not overweight, has had some blood pressure/cholesterol problems as of late.

Her change is a lot more drastic tho: no more oils in excess of any kind (to saute, nuts, avocados, etc.).

I definitely miss the meat tho, trust.
