I would just wait till you can find your size. For the price of all good leather jackets, its worth it to get the size that fits best. It might disappoint you or make you look for another jacket, but in the end its worth it. Otherwise you'll regret the jacket fitting too tight.

Depends on how you like your shoes to fit. Personally I wear a 9.5 in chucks and a 43 in CPs (which as you know is the same sole as Lanvin, Raf, Ys, etc.). Some people swear by going down a whole size, but I find it uncomfortable.

No. UVCs are not really a slim fit chino, despite what anyone says; they are merely on the slimmer side of a traditional chino fit. Like an ~8.25" hem on a size 30, if that helps.
