Tbh the best ones are usually the ones directly bought from the cheesemakers. If you are in the area, ask locals, maybe search for a farm shop, where a farm directly sells their produce, might score a good bread and cured meats in the process as well.
Re Hostels: Usually there are a few smaller hotels, if a village or city is a bit touristical. Else the usual chains (ibis, BnB, ....) are solid options, airbnb is worth checking out as well

Been searching for a few for the coming winter myself @Cocoa_Lapin.
From what I gathered: vintage is always a good option, scottish or irish made vintage ones can be found pretty cheap on the bay. Also Anderson & Co. looks good, great selection as well, can't comment on the quality though, have yet to try them.
Heimat also gets good reviews, bit pricey, but will probably outlast you.1 -
Warehouse, fullcount, denime. Resolute, evisus summer denim are also around that 13oz range, so on the lighter end of the spectrum

baked goods: pretzels, like the real ones, bavarian ones, swabian ones, taste both and make yourself an opinion, if you are in swabia: "Briegel" & "Seelen", maybe "Dinnete", if you are in Baden or the alsace tarte flambe or "flammkuchen", "zwiebelkuchen" is also a big thing around these parts, but you might be a little late for it. classically with fresh wine.
If possible try the whole grain breads, usually made in rectangle molds, lots of grains, sometimes nuts and stuffcheese: lots and lots of tiny cheesemakers in the alps between munich and italy, sometimes takes a good hike to get there, but you should try it out.

anything withing a half day or day by train is pretty much: slovenia, austria, switzerland, the swabish and badish regions, even northern germany takes about 8 hours via ICE train. Maybe even try out the alsace, right across the border of Baden.
you could visit lake constance, the alps and the black forest and the vosges in a matter of 4 days if you rent a car.2 -

If you are in europe anyways might head out to greece and turkey as well. Under the radar as well would be bucharest, sibiu and the likes, romania has lots to offer talking nature and 1900s cities.
