4) breast side down, 325 F for 60 mins, glaze every 15

 

5) take out while preheating to 450 F, re-glaze

 

6) put in for 15 mins breast side up

 

7) take out, rest 15-20 min
 

 

breast meat actually a bit rarer than i wanted, will try to crisp at 500 F instead of 450 F next time

you can prep the food with disposable nitrile gloves. i do that sometimes for stuff like that, or like if i buy like a hunk of pork and it's extra greasy, or if i'm de-scaling fish

 

or you could use industrial strength soap, lemon, vinegar, hand sanitizer or whatever after prepping the food in question
