On a different route- anyone want to suggest solid entry level medium-format film camera bodies+lenses? Possibly in the $200-400 range?

You can probably find a Mamiya RB67 for that much, maybe an RZ67 at the higher end of that price range. RB67s are good cameras but they are pretty heavy. The only other decent options in that price range are basically TLRs, and they come with their own set of disadvantages, so I'd say an SLR is the way to go.

Would it be sacrilege to buy a Leica M6 and then put a Voigtlander lens on it?
